Sam Wilson

Head Chef Sam Wilson’s relationship with food and hospitality started very early growing up in his family’s restaurant The Java. Raised in a vegetarian household his professional career started at age 16 in 2001 cooking vegetarian food in Hebden Bridge, West Yorkshire.

In 2008 Sam moved to London to work at Gordon Ramsay’s Maze and since then has worked in a string of the UK’s most prestigious Michelin-starred restaurants including working for Phil Howard and Tom Aikens.

After joining Grays Court in August 2017 Sam has been working closely with local suppliers to source the best of local seasonal ingredients to produce some of Yorkshire’s finest cuisine.

With Yorkshire's finest produce in our kitchen the menus will write themselves.

From our garden to your plate

At Grays Court we are committed to providing fresh, high quality, locally and sustainably grown food. To this end, over the past several years, our head gardener, Jules Fern, has been extending the range of edible produce we grow alongside ornamentals in our half acre of garden. From heritage Yorkshire cultivars, such as Apple ‘Ribston Pippin’ and Rhubarb ‘Brandy Carr Scarlett’, to traditional herbs and more unusual vegetables and edible flowers, all of the produce in the garden is grown organically.

We are fortunate to be located in the heart of “God’s own country”, surrounded by a fantastic array of top-quality produce. We grow some of our own produce right here in the garden, ensuring the highest levels of quality and sustainability, by growing without chemicals and eliminating food miles and packaging.
